You can change stations in Paris most easily with a pre-booked taxi. The driver waits at the end of the platform holding a card with your name on it.
The vehicles are spacious and can take skis and snowboards (at no extra cost). If your train is delayed (rare) the driver will wait for you. All the drivers speak English.
The drive from Paris-Nord to Paris-Est takes around five minutes in the taxi. You should allow a minimum of 40 minutes in total (i.e. Eurostar arrival to onward train departure) for the change from Paris-Nord to Paris-Est, to be on the safe side, and more if you want to stop for lunch, obviously.

The taxi rank at Paris-Est
When you arrive at Paris-Nord on a Eurostar, you can turn right and exit the station (30 metres) and the taxi rank is right there.
Taxis arrive constantly and even when there is a queue, it rarely lasts more than 10 minutes.
The drive from Paris-Nord to Paris Est takes about seven minutes.
The price from Paris-Nord to Paris-Est is 8€ - 10€ per four-person taxi. These can carries skis or snowboards. There is normally a 1€ charge per big piece of luggage.
You should allow about one hour in total for the change from Paris-Nord to Paris-Est, to be on the safe side.
How to walk from Gare du Nord to Paris Gare de l'Est
It's approximate 10 minutes walk between Paris-Nord and Paris-Est
Exit Gare du Nord into the Boulevard de Denain straight ahead, turn left into the Boulevard de Magenta, then left again into the Rue du 8 Mai 1945.
There's an even shorter route, but it involves a flight of stairs, so avoid that. Ask any local to make sure you are headed the right way - everyone is helpful.
You should allow about one hour in total for the change from Paris-Nord to Paris-Est, to be on the safe side.
The Metro (not recommended for this transfer)
The Metro journey between Paris-Nord and Paris-Est is only one stop.
It really isn't worth the bother - better to walk above ground, because by the time you've walked down into the Metro, got the Metro one stop and come up, it would have been just as quick and easy to walk above ground.
Kind of like taking the tube from Covent Garden to Leicester Square (a bit longer, but the same principle).
